      Instructions

      Prepare the Base:
      In a large container, mash the ripe banana until smooth. Add the Mementa's Coconut Milk, cinnamon, vanilla extract, and salt, and whisk until well combined. You want this batter to be silky smooth, so it coats the bread perfectly.

      Cook the French Toast:
      Heat a non-stick skillet over medium heat. Dip each slice of bread into the batter, ensuring both sides soak up the mixture. Let any excess drip off before placing the bread in the skillet. Cook for about 3 minutes per side, or until golden and crispy. Add Mementa's Coconut Oil to the skillet as needed to keep the toast crispy and rich.

      Serve:
      Transfer the golden French toast onto a plate. Drizzle with warm maple syrup, top with fresh blueberries, and sprinkle with shredded coconut for that perfect finishing touch.
