Coconut Turmeric Rice
Ingredients
For the Base:
- 1–2 tsp neutral oil (e.g., olive oil)
- 1 tsp minced garlic
- 1/2 tsp sea salt
- 1 tsp onion powder
- 1 cup white basmati rice (rinsed and drained)
- 1 cup Mementa's Coconut Milk
- 3/4 cup vegetable broth
- 1 tsp ground turmeric
For Garnish (Optional):
- Fresh cilantro or parsley
Instructions
- Prepare the Base:
- Heat 1–2 tsp of neutral oil in a nonstick pot over medium heat.
- Add the minced garlic and sauté for 1–2 minutes until fragrant.
- Combine Ingredients:
- Stir in the basmati rice, Mementa's Coconut Milk, vegetable broth, turmeric, onion powder, and sea salt.
- Increase the heat and bring the mixture to a boil, leaving it uncovered.
- Simmer to Perfection:
- Once boiling, reduce the heat to medium-low, cover the pot with a lid, and let it simmer.
- Stir occasionally to prevent sticking, and cook for 15–20 minutes, or until the liquid is absorbed and the rice is fluffy.
- Garnish and Serve:
- Fluff the rice with a fork.
- If desired, garnish with fresh cilantro or parsley for a burst of color and flavor.
