Coconut Turmeric Rice

Ingredients

For the Base:

  • 1–2 tsp neutral oil (e.g., olive oil)
  • 1 tsp minced garlic
  • 1/2 tsp sea salt
  • 1 tsp onion powder
  • 1 cup white basmati rice (rinsed and drained)
  • 1 cup Mementa's Coconut Milk
  • 3/4 cup vegetable broth
  • 1 tsp ground turmeric

For Garnish (Optional):

  • Fresh cilantro or parsley

 

 

Instructions

  1. Prepare the Base:
    • Heat 1–2 tsp of neutral oil in a nonstick pot over medium heat.
    • Add the minced garlic and sauté for 1–2 minutes until fragrant.
  1. Combine Ingredients:
    • Stir in the basmati rice, Mementa's Coconut Milk, vegetable broth, turmeric, onion powder, and sea salt.
    • Increase the heat and bring the mixture to a boil, leaving it uncovered.
  1. Simmer to Perfection:
    • Once boiling, reduce the heat to medium-low, cover the pot with a lid, and let it simmer.
    • Stir occasionally to prevent sticking, and cook for 15–20 minutes, or until the liquid is absorbed and the rice is fluffy.
  1. Garnish and Serve:
    • Fluff the rice with a fork.
    • If desired, garnish with fresh cilantro or parsley for a burst of color and flavor.
