Coconut Mushroom Pizza
Ingredients
For the Base
- 1 recipe Go-To Pizza Dough (or store-bought pizza dough)
- 1 tablespoon vegan butter or olive oil
For the Mushrooms
- 1 tablespoon vegan butter or olive oil
- ½ yellow onion, chopped
- 2 cloves garlic, minced
- 450 g button mushrooms (about 6 cups sliced)
For the Coconut Sauce
- 1 tablespoon vegan butter or olive oil
- 1 tablespoon all-purpose flour (or gluten-free blend)
- 1 ½ cups Mementa's Coconut Milk
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
1. Preheat the Oven
- Preheat your oven to 425°F (220°C).
- Lightly grease a pizza pan.
2. Prepare the Mushrooms
- Melt 1 tablespoon vegan butter in a large skillet over medium-high heat.
- Sauté onions and garlic for 2 minutes until softened.
- Add sliced mushrooms and cook for about 5 minutes until reduced in size.
- If needed, add a splash of water to prevent sticking.
- Remove mushrooms from the skillet and set aside.
3. Make the Coconut Sauce
- Melt 1 tablespoon vegan butter in the same skillet.
- Sprinkle in flour and stir into a paste. Cook for 1 minute.
- Whisk in Mementa's Coconut Milk, thyme, lemon zest, lemon juice, salt, and pepper.
- Simmer and whisk for 5 minutes until thickened. The sauce should coat the back of a spoon.
- Remove from heat and let cool slightly.
4. Assemble the Pizza
- On a lightly floured surface, stretch the pizza dough to fit your pan.
- Spread the sautéed mushrooms evenly over the dough.
- Pour the cooled coconut sauce over the mushrooms.
5. Bake the Pizza
- Bake for 18–20 minutes until the crust is golden and the sauce is bubbling and lightly browned.
6. Serve
- Let the pizza cool for 10 minutes before slicing.
