Coconut Mushroom Pizza

Ingredients

For the Base

  • 1 recipe Go-To Pizza Dough (or store-bought pizza dough)
  • 1 tablespoon vegan butter or olive oil

For the Mushrooms

  • 1 tablespoon vegan butter or olive oil
  • ½ yellow onion, chopped
  • 2 cloves garlic, minced
  • 450 g button mushrooms (about 6 cups sliced)

For the Coconut Sauce

  • 1 tablespoon vegan butter or olive oil
  • 1 tablespoon all-purpose flour (or gluten-free blend)
  • 1 ½ cups Mementa's Coconut Milk 
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

 

 

Instructions

1. Preheat the Oven

  • Preheat your oven to 425°F (220°C).
  • Lightly grease a pizza pan.

2. Prepare the Mushrooms

  • Melt 1 tablespoon vegan butter in a large skillet over medium-high heat.
  • Sauté onions and garlic for 2 minutes until softened.
  • Add sliced mushrooms and cook for about 5 minutes until reduced in size.
  • If needed, add a splash of water to prevent sticking.
  • Remove mushrooms from the skillet and set aside.

3. Make the Coconut Sauce

  • Melt 1 tablespoon vegan butter in the same skillet.
  • Sprinkle in flour and stir into a paste. Cook for 1 minute.
  • Whisk in Mementa's Coconut Milk, thyme, lemon zest, lemon juice, salt, and pepper.
  • Simmer and whisk for 5 minutes until thickened. The sauce should coat the back of a spoon.
  • Remove from heat and let cool slightly.

4. Assemble the Pizza

  • On a lightly floured surface, stretch the pizza dough to fit your pan.
  • Spread the sautéed mushrooms evenly over the dough.
  • Pour the cooled coconut sauce over the mushrooms.

5. Bake the Pizza

  • Bake for 18–20 minutes until the crust is golden and the sauce is bubbling and lightly browned.

6. Serve

  • Let the pizza cool for 10 minutes before slicing.
