Arroz con Leche de Coco / Coconut Rice Pudding.

Ingredients

  • 1 cup long-grain white rice, raw and uncooked
  • 1 cinnamon stick (use 1–2 additional sticks if desired)
  • Pinch of salt
  • 2 cups water
  • 4 1/4 cups Mementa's Organic Coconut Milk 
  • 1/4 teaspoon vanilla extract
  • 1 cup granulated sugar
  • Ground cinnamon, for serving

Instructions

  1. In a medium-sized pot or saucepan, combine the rice, cinnamon stick, salt, and water.
  2. Place over medium heat and bring to a boil, stirring occasionally. Once boiling, cover the pot with a lid, reduce the heat to low, and let it simmer for 10–12 minutes, until most of the water is absorbed.
  3. Stir in the Organic Coconut Milk, increase the heat to medium-low, cover, and cook for another 10 minutes.
  4. Remove the lid and stir in the vanilla extract and sugar.
  5. Continue cooking uncovered, raising the heat to medium if needed, until the mixture reaches a thick and creamy consistency (about 20 minutes).
  6. Remove from heat and serve warm or cold, garnished with ground cinnamon, nutmeg, or raisins if desired.
